As far as I’m concerned, cheese should be its own food group. I feel the same way about avocados. When I combined avocado, cheese AND hummus together, you know I was in heaven!
One Saturday before I moved to Raleigh, I wanted a snack, wasn’t sure what, but knew it needed to be something I could make quickly. After looking in my refrigerator (which didn’t have much since I was 2 weeks out from moving, I combined these 3 ingredients with lettuce and tomato and a new snack was born!
First up, you’ll need tortillas. I use the small ones for tacos.
Next, grab your favorite brand of hummus. I LOVE hummus; although, I find it rather strange that I don’t like chickpeas. One of my favorite snacks is hummus and naan bread. What more could a girl ask for?
Spread hummus on the tortilla with the back of a spoon. Yum!
Next up is the cheese. I’m going to warn you now. I LOVE cheese more than I do hummus. I eat cheese every. single. day. I just can’t get enough of it! You can use whatever type of cheese you want. I chose Swiss and Colby Jack cheese.
Now add some lettuce and tomato.
Last, but definitely not least AVACADO! I wonder if I could only eat cheese, hummus, and avocado, with an occasional glass of wine. Probably not, huh?
Okay, it’s almost ready. Now it’s time to roll that baby up!
Guess what? It’s ready to eat! Just grab a knife and slice and your snack is ready.
Time for me to go eat now.
Oh! When I make these for guests, I place them on a bed of kale, drizzle some balsamic vinegar on the kale and we have the kale with the rollups.

Spread hummus on the tortilla with the back of your spoon. Place cheese in a row down the center of your tortilla. Next layer the lettuce and then tomato. Add several slices of avocado on top. Tightly roll tortilla. Cut slices as wide or narrow as you would like. Enjoy!
