Quick and Easy Guacamole

As someone who cooks every day, there are some foods I adore and want to eat all day, every day.  Avocados are on that list.  If I could be healthy with avocados, tomatoes, and cheese, that is all I would eat.  Since a woman cannot live on avocados, tomatoes, and cheese alone, I have to eat other food.  Sigh…

Guacamole Recipe

Guacamole is one of my favorite snacks.  It’s easy to make and man, it’s just soooo good! Today I decided to not be selfish and share my favorite snack with y’all.  I must really love you!

There are very few ingredients in guacamole so you have no excuse to not make it because it is just that easy!  I only use 2 tools for this recipe.  My mortar and pestle plus a spatula.  That’s it!

Peel, remove the seeds and chop up your avocados.  I use my mortar and pestle all the time! It comes in so handy when you need something all mashed up like avocados for guacamole. I like my guacamole chunky so I mash some and leave some of the chopped avocados intact.

Next, it to chop up the tomato and add it to the avocados.  It’s now time for the chopped garlic and…the chopped onion.

 

I really want to eat this now, but I know I have to mix with my spatula first.  I’m going to try to be patient.  It’s hard!  It’s time to eat now.  Wahoo!!!!  Such excitement, joy, and happiness.

I’m going t0 grab a small bowl, tortilla chips, and head to the back porch, and eat to my heart’s content because I’m impatient and can’t wait for it to chill!  Let the guacamole chill in the refrigerator for a minimum of 4 hours.  Garnish with cheddar cheese when served.

    Mmm..guacamole..I love it! But I don’t actually make it that often because I’m the only one in my family who likes it. I think I need to start making it just for my self 🙂

    I love guacamole! I use my pestle and mortar too and can’t resist adding a bit of chilli. I’ve not thought of adding cheese on top though – I shall be doing that from now on!

    Huge guac fan. This recipe is perfectly simple, just a few ingredients and something I can easily whip up at the campground to share with our friends!

      No, I haven’t. They never last long enough to get to that point. I eat them almost as soon as I get them! Hahahaha…do they last well in the freezer?
