As someone who cooks every day, there are some foods I adore and want to eat all day, every day. Avocados are on that list. If I could be healthy with avocados, tomatoes, and cheese, that is all I would eat. Since woman cannot live on avocados, tomatoes, and cheese alone, I have to eat other food. Sigh…
Guacamole is one of my favorite snacks. It’s easy to make and man, it’s just soooo good! Today I decided to not be selfish and share my favorite snack with y’all. I must really love you!
There are very few ingredients in guacamole so you have no excuse to not make it because it is just that easy!
I only use 2 tools for this recipe. My mortar and pestle plus a spatula. That’s it!
Peel, remove the seeds and chop up your avocados. I use my mortar and pestle all the time! It comes in so handy when you need something all mashed up like avocados for guacamole. I like my guacamole chunky so I mash some and leave some of the chopped avocados intact.
Next, it to chop up the tomato and add it to the avocados. It’s now time for the chopped garlic,
And…the chopped onion.
I really want to eat this now, but I know I have to mix with my spatula first. I’m going to try to be patient. It’s hard!
It’s time to eat now. Wahoo!!!! Such excitement, joy, and happiness.
I’m going t0 grab a small bowl, tortilla chips, and head to the back porch, and eat to my heart’s content because I’m impatient and can’t wait for it to chill! Let the guacamole chill in the refrigerator for a minimum of 4 hours. Garnish with cheddar cheese when served.
- 6 Avocados
- 2 tomatoes
- 2 cloves of garlic
- 1/3 c Yellow onion
- 2 T Cilantro
- Juice of 1 lime
- Cheddar cheese
- Salt and pepper to taste
- Peel the avocados and cut into small pieces
- Add the juice of a lime to the avocado
- Cut and dice the tomatoes and add to the avocado
- Chop the garlic and onion and add to the avocado
- Chop the cilantro and add to the avocado
- Add salt and pepper to taste
- Chill in the refrigerator for 4 hours
- Garnish with cheddar cheese when time to serve
