One of E’s favorite dishes that I make is lemon pepper chicken wings. They’re super lemony, flavorful, and there’s juice leftover for the rice in true Southern tradition! These are so easy to make.
You know me, first thing is to soak my chicken in warm water with fresh lemon juice. To soak your chicken, grab a bowl, fill it with warm water. Take a whole lemon and rub it around to get the most juice from it. Slice the lemon in half and squeeze the lemon juice over the chicken into the water, pulp and all! Soaking the lemon juice will help to loosen the fat.
Let sit for 30 minutes.
Pour the lemon water out and rinse off the chicken. Leave in the bowl while you grab a pan and pour olive oil at the bottom of the pan to prevent sticking. Next, take the white wine and pour enough to cover the bottom of the pan. For my 8.5″ x 11″ pan it took 1 cup. Set the pan aside.
Pour olive oil on the chicken parts and mix around to make sure the chicken is coated. Take another lemon and squeeze the juice over the chicken. Add the garlic powder, pepper, and lemon pepper seasoning.
The smell of fresh lemon is so fabulous! Place the bowl of chicken in the refrigerator and let the chicken soak in the seasoning for a minimum of 30 minutes. It’s even better if you let it soak overnight!
Take the bowl of chicken out of the refrigerator and pour into the pan, juice and all! Yum!
Cover the pan with foil and make sure the foil is sealed around the pan so air doesn’t get out. You want the steam to gather within the pan to help cook the chicken. Once covered, place in the oven, 200 degrees and cook for 1 hour.
Remove the foil, increase the oven temperature to 375 degrees. Cook for 20 more minutes. After 10 minutes, turn the chicken over and sprinkle more lemon pepper seasoning over the chicken.
After this, the chicken is done, but E likes his chicken really done and a little crispy so I place them back in the oven on broil, 5 minutes on each side.
- 1 Whole chicken
- 2 stalks Celery
- 2 Green onions
- 3 t Fresh dill
- 1 1/2 t Garlic powder
- 1/4 t Salt
- 1 t Black pepper
- 1 1/3 C Mayonnaise
- 2 t Spicy Mustard
- Thoroughly was chicken. Place chicken in a pot and cover with water and add the lid to the pot. Let chicken cook on low to medium heat until cooked thoroughly, about one hour.
- Pour out water and place chicken on a clean surface.
- Remove skin and pull meat from the bone. Place chicken in a bowl.
- Cut up green onion, celery, and fresh dill, and place in bowl with chicken. Add garlic powder, black pepper, salt, mustard, and mayo.
- Mix well.
- Use for sandwiches or grab a few greens and create a salad!
